Easy Steps to Success  - Basic Caking & Decorating Guidelines

Step by Step : Ganache

It's very easy to make ganache. Try this recipe and I'm sure you will love it so...much!
One of my kids' favourite cake topping.

Ingredients:
1.Whipped Cream     -  Rich Gold Label (Non dairy product)
2.Cooking Chocolate -  Chocolate Bar ( I love KC Candy - for best results) 
3.Golden Syrup          - 1 tablespoon

Step by Step:
1. Using the double boil technique (Add some water in your pot, let it simmer, turn down the heat-to lower     the temperature.On top of the pot, let your bowl sit).Warm your milk (low heat) and stir with a spatula.
2. Cut and slice your chocolate bar to small pieces
3. The Ratio :- 
    Option 1)  1:1   (1 milk : 1 chocolate)     For example, 907g of milk = 907g of chocolate
    Option 2)  1:1.5 (1 milk : 1.5 chocolate) For example, 907g of milk = 907g + 453.5g of chocolate 
    Option 3)  1:2    (1 milk : 2 chocolate)    For example, 907g milk = 1814g of chocolate
    Note: My favourite is option 2.
4. Once your milk is warm (do not let it boil/ do not leave the stove while you are doing this) Add in the       
    chocolate, stir with a whisker and then add in the golden syrup.
    Make sure all the chocolate melt in the bowl.
5. Remove your bowl from the stove and on to the table.Stir and leave to cool.
6. After a while, fold the ganache and see if you can form an alphabet S on the surface of the ganache, it is 
    then ready to be poured onto your cake.
7. Start pouring from the middle of the cake and let it run all over the cake, to the sides by itself. Hold your       cakeboard and turn it around so the ganache will be evenly distributed.

Step by Step : Basic Buttercream

A very simple yet delicious buttercream that can hold the cake in a hot weather.You may also add a stick of pure butter to make it even more tastier!

Ingredients:
1. Shortening   : 250g
2. Krimwell     : 1 kg
3. Icing Sugar  : 400g
4. Pure Butter  : optional/1stick or less
    Note: In a very warm condition, butter can easily melt thus I would not add them in the mixture if the cake     needs to travel far.

Step by Step
1. Add in the shortening and krimwell in your mixer.
2. Sieve the icing sugar and add to the mixture
3. Start the mixer on low speed. Once all the ingredients are incorporated, turn to high speed.














Step by Step : How to layer your cake/cakes

             The pictures will guide you in your 'journey to eternal beauty' for your cake/cakes. You should begin by layering the base of the cake board with buttercream. Next,remove the bulging top part of the cake and save them for later use(save them in a tight container and it will keep them moist), take the first top and put on top of the layered cream. Use the ice cream scoop to add buttercream to the top of the layered cake.This will ensure that you have even layers and they will look so...wonderful when you cut them into slices.Once you finish layering all the cake pieces, be it 2 layers, 4 layers or any multiple layers that you want, cream all the top and sides of the cakes with the buttercream. Then you are ready to pour your ganache all over the cake.For best results, make sure that you keep the cake in the fridge for at least half an hour before pouring the ganache on top of the cake.All these processes should be done before you start making your ganache.
Finally, create your own flower bouquet (should do this in advance: get 2 sets of readymade sugarflowers, tie them together with ribbons of your choice) and carefully place them on top of the cake. You are then ready to present your cake to your beloved family, relatives or be given as a special gift to someone that not only cheer up your life but make your life beautiful and meaningful.
