My Special Chocolate Cake Recipe

My Fantabulous Chocolate Cake Recipe








Dry Ingredients
250g superfine flour,Blue Key. I used Giant superfine flour
100g coco, I used 100% original coco,imported
300g superfine/castor sugar, @Tesco, I used 250g fine granulated sugar
1 teaspoon baking powder
1 teaspoon bicarbonat soda
1 teaspoon superfine salt

Wet Ingredients
240ml milk, I used fresh milk
240g hot water + 1 teaspoon of original nescafe
180ml vegetable oil, I used corn oil
2 large eggs  + 1 egg yolk
1 teaspoon pure vanilla extract
1 tablespoon of glycerin, for best results.

Step by Step Instructions:
1. Mix all the dry ingredients in a stainless steel/ glass bowl.
2. Stir all the ingredients with a whisker.
3. Put aside.
4. Prepare the wet ingredients by putting them in a clean bowl.
5. Start with milk, add in the oil, put aside.
6. Put in the eggs + egg yolk. Stir the vanilla in the egg mixture.
7. Mix no.5 and 6. Stir to make sure all are incorporated.Add in the glycerin.
8. Add the dry ingredients little by little into the wet ingredients.
9. Add in the hot coffee. Stir to mix all the ingredients until incorporated.

Baking
1. Prepare 2 cake pans of 9 inches, lined with parchment paper
2. Divide cake into 2 divisions
3. Bake at 180 degrees for 40 minutes

Tips
1. Check your cake 5 minutes before times up.Insert a stick, if the stick is  
     not sticky, the cake is ready. If it is sticky, add another 5- 8 minutes.
2. The oven temperature may differ from one brand to another.I used gas oven.
     Adjust your oven temperature.
3. Do not OVERBAKE. Your cake will be dry and bitter.
